Recipe: Mini Apple Cobbler

  • 1 apple, preferably Gala, thinly sliced
  • 1 teaspoon fresh lemon juice
  • 1 Tablespoon plus 2 teaspoons light brown sugar, divided
  • 1/4 teaspoon ground cinnamon, divided
  • 2 Tablespoons all-purpose flour
  • 1 Tablespoon coarsely chopped pecans
  • 1 Tablespoon unsalted butter, room temperature
  • 1/8 teaspoon kosher salt
  • Vanilla ice cream (for serving; optional)

Special Equipment 

  • A shallow 8-ounce baking dish or heatproof ramekin


How to Make It… 

Step 1

  • Preheat oven to 375°F. Toss apple, lemon juice, 2 tsp. brown sugar, and 1/8 tsp. cinnamon in a medium bowl, then pack into baking dish.

Step 2

  • Mix flour, pecans, butter, salt, and remaining 1 Tbsp. brown sugar and 1/8 tsp. cinnamon in a medium bowl, squeezing and crumbling with your fingers until mixture comes together in little clumps. Scatter over apples.

Step 3

  • Bake cobbler until apples are bubbling and top is golden brown, about 35 minutes. Serve with ice cream, if desired.

    Hi Mark,

    I realize this recipe was posted a while back but it still looks like a great one to try out.
    Can you take a look at Step 3? It says to combine 1/2 sugar with 1/2 flour. However, neither of those 2 items is shown in the list above of ingredients needed for the filling.
    Also, in Step 2 you’ve already said to add the salt (?)

    I would love to make this cobbler. Sounds delicious. One of the readers suggested “the water” should be in step 3. I don’t see water in the recipe ingredients or in Step 3.

      We just changed the recipe yesterday to make is easier to follow. The new recipe does not call for water. Please let us know how it turns out for you. Thanks!

    Hi, Chef Mark here. This updated version of the recipe does not include water because Gala apples are higher in water content, and are often preferred for this kind of cooking. Let us know how it goes!
